Observation (CORRECTED DURING INSPECTION): The concentration of QUATS in sanitizer spray bottle was recorded >400ppm and was used to sanitize the food prep surfaces. The high concentration of QUATS could result in potential chemical food contamination. Staff prepared fresh sanitizer solution recorded at 200ppm.
Corrective Action(s): Always follow manufacturer's instructions for mixing and preparing sanitizer solution. Ideal concentration for QUATS sanitizer solution intended for use on food contact surfaces is 200ppm.

Observation: QUATS sanitizer dispensing unit installed at 3 compartment dishwashing sink was malfunctioning resulting in inconsistent flow of sanitizer concentrate through the pipe. This could affect the concentration of QUATS used for sanitizing food contact surfaces and may result in inadequate sanitation. Manager called the technician at the time of inspection and will be upgrading to new dispensing unit in 2 weeks. In the mean time, 3 compartment dishwashing sink located in meat department will be used for warewashing (easily accessible).

- Walk in cooler noted at 3C
- Display cooler at 0C
- Handwash sink was available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink used for manual ware washing.
- Meat slicer was in use at the time of inspection.
- Food storage practices were satisfactory.
- Staff has valid FOODSAFE Level 1 certificate.

Please notify your district EHO once the dispensing unit has been serviced/replaced.
