-Follow-up inspection to confirm compliance with correction requirements identified during routine inspection on Thursday, March 24th, 2022:
-Sanitation of the food premises is substantially improved, however, additional cleaning is required on the floors underneath the cooking line in the kitchen to remove food debris and oil residues.
-Storage room has been cleaned and reorganized. Recommend removal of the large commercial mixer, as staff indicate that it is not being used.
-Chlorine sanitizer solution is available at work-stations in the kitchen at 100+ppm chlorine concentration. Wiping cloths are stored in the solution when not being used for cleaning.
-Foods in the walk-in cooler are covered with lids/plastic wrap to protect against contamination
-Please contact the Strata or Pest control company to schedule a visit from the pest control technician as soon as possible to assess whether there is any rodet activity in the premises.
-Ensure to thoroughly clean all areas of the food premises on a regular basis. It's recommended to focus on cleaning smaller sections of the food premises at a time, on a regular basis rather than waiting for the sanitation level to deteriorate to unsafe levels.
