Observation (CORRECTED DURING INSPECTION): Observation: First routine inspection since opening. Staff were rinsing equipment in 2 compartment sink without detergent or sanitizer. All food contact surfaces (not just greasy ones) must be washed with detergent and sanitized to remove disease-causing pathogens. Staff did not know how to use the dishwasher because they never had done it. This is not acceptable. The facility was approved according to the dishwasher being used to wash + sanitize dishes / utensils.
*Correction: Checked to see if dishwasher works. It does - reached 74C at the plate level upon final rinse cycle. All utensils should be washed in the dishwasher from now on.

Comments

General Comments
-Bleach sanitizer buckets were at 200ppm
-All coolers were at </= 4C (upright: 4C; undercounter: 4C)
-Freezer was at adequate temp (-21C)
--Handsinks were stocked with liquid soap and paper towel
-tapioca pearls are time stamped for 4 hrs then discarded.
-No signs of pests were observed
-Facility was in good sanitary condition
-Staff wash hands frequently
-FOODSAFE certified staff present
-Take-out containers only for customers

-Begin taking temperatures daily of coolers / freezers.
