Observation (CORRECTED DURING INSPECTION): The dishwasher is not working properly. Alternate dishwashing method is required.
Corrective Action(s): Manual dishwashing method permitted temporarily. Follow these instructions:
1. Clean and sanitize one of the sinks in the dishwashing area.
2. Fill up the cleaned sink with 100 ppm chlorine sanitizer (Ratio is 1/2 teaspoon unscented household bleach per 1L clean water).
3. Wash all dishes, utensils, cups, glasses, equipment, etc. in the dishwasher
4. Submerge completely in the chlorine sanitizer for 2 minutes
5. Air dry before using

Continue to use the above method until approval to resume normal dishwashing procedures is given by the health inspector

Observation: Low temperature dishwasher is unable to dispense chlorine sanitizer. Chlorine test strips measured 0 ppm.
Corrective Action(s): Repair the dishwasher so it is able to dispense chlorine sanitizer at 50 ppm. Operator called for repair services during inspection. Date to be corrected by: January 3, 2019

Observation: Dishwasher logs have been maintained incorrectly. Chlorine strips were not available and staff have been recording "100 ppm" on the logs without testing the dishwasher properly.
