Observation: Found meat slicer with food debris in the hard to reach areas.
Correction: If the meat slicer is no longer being used remove from premises. If you wish to use the meat slicer staff must ensure it is properly cleaned and sanitized. Remove all of the big parts to make sure all of the hard to reach areas can be reach to remove all food debris to prevent contamination of other foods. Clean all food off, then sanitize with 100 to 200 ppm chlorine.

- All food prep now done in kitchen area on cutting boards and stainless steal tables
- Cooling is being done using ice baths
- Thawing is being done in the cooler
- Dishwasher had 50 ppm chlorine, test strips are on site
- Sanitizer bucket had 100 ppm chlorine
- All old rice bags and tin foil have been removed and new stainless steal shelves have been installed
- Hand sinks are easily accessible
- Changes in the kitchen are a great improved! New stainless steal tables and shelves increase storage space and food prep areas.
