Observation (CORRECTED DURING INSPECTION): Small amount of chili in the hot holding unit was measured at 35C internally. Reviewed the corporate food safety plan on site with the manager. It does not address a corrective action for such situation. Product discarded due to temperature abuse. Ensure hot potentially hazardous foods are stored at 60C or higher at all time.

Observation: Liquid soap dispenser at the hand washing station next to the chocolate dip hot holding unit was empty.

Observation: 1. Sticky residue noted on the floor in front of the walk in cooler.
2. Small pool of water observed under the big cold well basin.

Routine inspection conducted:
Hand washing stations (2 of 3, see the violation section for detail) were fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers (walk in cooler, under the counter coolers, cold wells) measured at 4C or less.
Freezer measured at -18C.
Hot dog hot held at 60C or higher.
3 compartment sink fully equipped for manual dishwashing.
QUATS sanitizer measured at 200 ppm at the dispenser and sanitizer pail. Test strip available on site.
Routine pest control in place. No sign of recent pest activity was noted at this time.
Dry item storage practice is adequate.
Ice machine is in sanitary condition.
