Observation (CORRECTED DURING INSPECTION): Chicken breasts left cooling in an insert on the counter - notime tracking. Do not cool foods on the counter for >30 minutes; then move to fridge. Use shallow pans and don't stack chicken breasts more than 2 or 3 deep.

Observation (CORRECTED DURING INSPECTION): 1) Several food containers noted VERY dirty; bucket for vinegar, pitcher of cooking oil, bulk ingredient containers. Clean and sanitize these items regularly; at least once per month.
2) VERY dirty shelf in servery room used to store scoop, etc is filthy. Clean.
3) Shelves used to store cups are lined with cloths; some of which are VERY dirty. (Some stuck to theshelf.) Do NOT use cloth to line shelves. Use bare shelves and keep them clean and sanitized.

Observation (CORRECTED DURING INSPECTION): Sake pitchers are not always washed properly - one of them was found coated with white mold inside.

Observation (CORRECTED DURING INSPECTION): Hand sink in dishwashing area was partially blocked by saran. Hand sink behind sushi bar had an ipad right next to it, making it difficult to use without getting ipad wet.

2) Two large boxes of chicken breasts stored on floor of walk-in fridge.
3) Sushi rice had a cloth in the rice cooker with it. This could contaminate the rice andn is not allowed.
4) Personal beverage noted on shelf above prep cooler. Keep personal beverages away from food prep areas.
5) Light cover missing at back of kitchen.

Observation: 1) Fridge condenser is plumbed to 3 compartment sink. Condenser water is not potable and must not drain here. Re-plumb to a floor drain, drain pipe or hand sink.
2) Raw wood beside fryer is extremely dirty and not properly cleanable. Refinish or replace.
3) Cardboard and foil used throughout to cover surfaces instead of proper cleaning. Remove.
4) Shelf in bubble tea/servery area is badly worn and dirty; requires refinishing.
