Observation (CORRECTED DURING INSPECTION): Level of Quat sanitizer was low in most of the buckets/inserts where serving utensils are stored. These solutions without adequate sanitizer are ideal breeding grounds for bacteria, should it become contaminated.
Corrective Action(s): - Keeping the solution below 4 degrees will limit bacterial growth (e.g. place ice in these solutions)

Comments

- Temperature of all coolers and freezers were adequate.
- Hot holding was over 60 degrees C.
- Liquid soap and paper towels were available at hand sinks.
- Quat sanitizer was available for use in prep areas.
- Dishwasher final rinse temperature was 82 degrees at the plate.
- ~ 12.5ppm iodine was detected in the glasswasher.
- No signs of pest infestation.

Some deep cleaning required under counters/sinks in the bar.
