Observation: Mouse droppings noted in the following areas:
- On floors in hard-to-reach areas/underneath racking by the dishwasher
- On some pallets storing packaged/sealed bags of raw ingredients
Corrective Action(s): Clean and sanitize areas with mouse droppings. Ensure to monitor for new droppings on a daily basis, and clean and sanitize as needed.

- Parisian cabinets require cleaning and sanitizing - shelves also significantly covered in flour and dough debris.
- Floors in hard-to-reach areas with rodent droppings require cleaning and sanitizing.

Comments

- Liquid soap and paper towels available at hand washing stations. Hot water was available by the end of the inspection.
- High-temperature dishwasher reached above 71C at the dish surface during rinse cycle.
- Bleach available for sanitizing.
- Walk-in cooler measured at 2C. Walk-in freezer temperature satisfactory.
- Three-compartment sink maintained in sanitary conditions. Sink plugs available.
- All food/ingredients stored off the floor - good. All opened ingredients stored in pest-proof bins - good.
- Couche cloths are now stored in pest-proof containers as well - good.
- Shelves for Parisian cabinets are scraped, cleaned, and sanitized on regular rotation, however more shelves should be done each time since the shelves in use still appear to have significant amounts of caked-on flour/dough (see violation code 306 above).
- Pest control is currently in place, with bi-weekly services. Invoices were available on-site for review. Operator is looking into weekly services with an alternate company.
- Bay doors were observed to be properly sealed at time of inspection.
