Observation (CORRECTED DURING INSPECTION): At the time of inspection 3 compartment sink not setup for manual warewashing.
Corrective Action(s): This is a recurring issue. Ensure the 3 compartment sink is setup for manual warewashing. Wash, rinse, sanitize in 200ppm quats for 2 minutes then air dry all utensils, cooking equipment, and dishes.

Observation (CORRECTED DURING INSPECTION): At the time of inspection hand wash station in dishwashing area paper towel dispesner empty.
Corrective Action(s): Ensure all designated hand wash stations are provided with liquid soap and paper towels at all times.

- As mentioned in the previous inspection do not store frozen pizza dough in garbage bags.
- Can of opened galub jamans observed stored in the walk in cooler.
Corrective Action(s):
- Store all food products in food grade containers, use tight fitting lids and/or cover with saran wrap.
- Once canned food products are opened transfer content into food grade containers.

Pizza preparation cooler inserts and lower section at or below 4 degrees C.
Hot holding at or above 60 degrees C. Sneeze guard in place at buffet. Food is dispensed by staff onto single use plates.
Domestic freezer at -15 degrees C. Defrosting required.
Hand sink provided with liquid soap and paper towels.

100ppm bleach available for use. Reminder to store wiping cloths in this solution when not in use.
Walk in cooler (front) at 2 degrees C.
