Observation (CORRECTED DURING INSPECTION): Hydrogen peroxide based cleaner/disinfectant has been in use to sanitize food prep surfaces. Operator had prepared 200ppm chlorine solution in a labelled spray bottle. All food prep surfaces to be sanitized using this solution as advised at this time.
Corrective Action(s): Ensure to have 100-200ppm chlorine solution available for use at all times. Use the test strips provided at this time. Ensure to sanitize all food prep surfaces before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation. Hydrogen peroxide based cleaner/disinfectant can still be used for non food prep surfaces as per manufacturer's instructions.

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/under 4'C; freezers operating at/under -18'C.
NOTE: Sandwich prep cooler and front display cooler had ambient air temperature measured at 6'C. Both units undergoing a defrost cycle as per display. Ensure both units are operating at 4'C or below after a defrost cycle is complete.
- Thermometers available for temperature monitoring.
- High temperature dishwasher achieved 74.9'C at the plate level after final rinse.
- No evidence of pest activity observed at this time. Washroom available for customers.
- General sanitation satisfactory, but could be improved by decluttering the back area.
