302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Several wet wiping clothes stored on the counter. Most of the bleach sanitizers were over 200ppm, one bleach sanitizer in sushi bar was measured at 50ppm. No test strips onsite.
Corrective Action(s): Ensure to return wiping clothes back to bleach sanitizer between uses. 1 teaspoon bleach to 1 litre water to make 100ppm. Order more test strips.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One metal bowl with spoon stored in one of the sushi bar handwash stations.
Corrective Action(s): Bowl removed. Keep all handwash stations empty and accessible at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): A few inserts of food stored in the cooler were uncovered. Scoop for dry rice was fully submerged inside rice. One bin of rice was stored on the floor by kitchen handsink.
Corrective Action(s): Always cover food when not in use. Store rice scoop vertically so handle is not submerged in food. Do not store food on the floor, all food must be stored 6 inches off the floor.

304 - Premises not free of pests [s. 26(a)]
Observation: Few fruit flies noted around kitchen handsink and dry storage room. Floor is very wet in these areas.
Corrective Action(s): Increase cleaning and reduce moisture to prevent fly harbourage.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris noted on the floor (rice around hot water tank) and under equipment, as well as side of ice machine.
Corrective Action(s): Please have all noted areas properly cleaned and sanitized by follow up inspection.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: One ceiling light in the back is missing. A few of the ceiling lights do not have a cover.
Corrective Action(s): Please replace ceiling light and provide covers as well.

Observation: A few staff jackets and bag noted on the top shelving units of the waitressing area where it is meant to store items for restaurant. A separate staff belonging area is located in the back storage room.
Corrective Action(s): Please relocate jackets and bag to the designated staff belonging shelf in the back.

Observation: No thermometer in one of the sushi bar coolers.
Corrective Action(s): Install an accurate, working thermometer inside sushi bar cooler.

Observation: One staff member wearing sandal while preparing food in the kitchen (makes tempura).
Corrective Action(s): All food handlers must wear closed toe foot wear.

No water bucket present in tempura station
Dry storage is adequate
Mop room appears to be maintained
Overall sanitation level has improved, please continue to maintain this level of sanitation at minimum
