Routine Inspection:

- Hot/cold water, liquid soap, and paper towel available
- High temperature dishwasher reached 71C at plate surface or greater
- Walk in, chest and upright freezers reached -18C or lower
- Walk in and Preparation table coolers reached 4C or lower. Sushi Bar coolers were 7C - food is only held during busy times (lunch and dinner) and then stored in under-counter coolers
- Hot holding for rice reached 60C or higher
- Vinegar used for sushi rice
- Ventilation hoods recently serviced; next cleaning date in August 2023. Operator uses paper towel to remove excess grease and is changed daily.
- No pest activity observed during inspection
