Observation: Green wire rack shelving unit in side the meat dept walk in cooler observed to be rusting/flaking.
Corrective Action(s): Replace green wire rack unit.

***Quat temperature too high at 100F. Lower dispensing temperature so that Quat is dispensed at approx. 75F
***Gaps observed in the Quat monitoring logs. Upgrade Quat monitoring log as discussed.
Quat is being dispensed at approx 200ppm in sanitizing sink in meat department.
Quat dispensed by hand in the deli department into the sanitizing sink. Staff have Quat test strips on site to verify concentration.
No pest issues observed
All refrigeration equipment is electronically monitored.
All cold holding equipment observed to be cold holding at <4c
Freezers observed to be cold holding at <-18c
