Observation (CORRECTED DURING INSPECTION): Two packages of presliced cheese found with what appeared to be mold on them and were passed their best before date.
Corrective Action(s): Product discarded during inspection.

Observation: Significant improvement in cleaning noted based on last report however the back area behind the chest freezer was missed.
Corrective Action(s): Clean the area along the back of the walk in cooler where the wall meets the floor. Due: Tomorrow.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Line cooler was at 7C during inspection however no food was stored in unit. Repair person has come to assess and recommended it be defrosted but that has not been completed.
Corrective Action(s): Do not use cooler until it is consistently able to maintain 4C (40F) or less.

Observation: Dirty slicers, blenders, whole sink counters ,dirty rags on counter and sink...
Correction: Clean and sanitize all.

Observation: Two comp sink is full of dirty rags and utensils. No dishrack for drying.
Correction: Proper dishwashing must be done: 1. Wash with detergent and warm water, 2. Rinse 3. Sanitize with sanitizer (ie: bleach 1 oz in 1 gallon ) for 2 minutes.

√ Pest control company was in and did full assessment, continue to follow any and all recommendations
√ Chemicals have been labelled. Reviewed how to make a sanitizer and dish washing sign provided and posted at front two compartment sink.
