302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) No surface sanitizer available. 200ppm chlorine solution was prepared in a labelled spray bottle at the time of the inspection.
2) High temperature dishwasher not achieving the minimum required rinse temperature even after 6 cycles. As per facility's sales records, majority of orders are take-outs/deliveries with a very few dine in customers on weekdays. Facility will be closed on Wednesday. 200ppm chlorine solution was prepared in a dishwashing sink. All dirty dishes to be washed through the dishwasher --> sanitized by manually soaking in this solution for at least 30 seconds --> air dried. DO NOT rinse with water after sanitizing step.
Corrective Action(s): Ensure to have 200ppm chlorine solution available for use AT ALL TIMES. Kitchen staff must use the solution to have all food prep surfaces sanitized before initiating any food prep in the morning, every 2 hours and after each possible contamination.

Ensure to have the dishwasher repaired. Meanwhile, all dishes must be manually sanitized by following the method explained above.
