Observation (CORRECTED DURING INSPECTION): 1) Observation: Cloths on food contact surfaces were used without sanitizer.
Correction: Ensure all cloths are submerged in at least 200 ppm Quats to prevent the growth of pathogenic bacteria.
2) Observation: 1 sanitizer bucket noted below 50 ppm Quats.
Correction: Ensure frequent sanitizer changes to maintain Quats concentration at 200 ppm.
3) Observation: Sccoper for guacamole left in container without the use of ice.
Correction: In-use utensils must be kept cold at 4 deg. C or below. Ensure scooper is in an ice bath. Otherwise a new scoop each time.

Observation (CORRECTED DURING INSPECTION): 1) Observation: Fruit fly noted in a container of raw chicken in walk-in cooler.
Correction: Container of chicken discarded.
2) Observation: Foods (cheese, meats, and chicken wings) in cooler units not covered. One package of cheese was left in cooler drawer on top of an opened package.
Correction: Operator must ensure all foods are covered to prevent contamination. Opened cheese package was thrown out.

Observation: Observation: Mouse droppings noted in the office (underneath desk in corners), under the electrical panel, on packaged food containers, and on a box of opened fry holders.
