Observation (CORRECTED DURING INSPECTION): 1) No sanitizer present at time of inspection. Sanitizer is needed at all times to ensure adequate cleaning of food contact surfaces
Make sure there is adequate santizer always available by mixing 1 teaspoon bleach solution with 1 litre of water.
2) Sanitizing step not being done to ensure adequate cleaning of dishware. First wash dishes with soap and water, rinse with warm water, then dispense dishes into minimum 200ppm bleach solution for 2 minutes to ensure sanitation is satisfactory.
