Comments

- Routine inspection for cafeteria kitchen. Lunch service had just ended at time of inspection.
- Hand washing sink properly supplied with hot and cold running water, liquid soap, and paper towels.
- Three-compartment sink for manual warewashing was being set up during inspection - reviewed warewashing procedures, no concerns. Solution in sanitizing sink compartment was tested to be at 100 ppm chlorine residual.
- Quat sanitizer solution in sanitizing bucket tested to be at 200 ppm. Wiping cloth was stored in solution in between uses.
- All coolers were maintaining temperatures of 4C or colder.
- All freezers were maintaining temperatures of -18C or colder.
- Accurate thermometers available. Temperature records for coolers, freezers, and internal cooking temperatures well-maintained and available onsite - good.
- Hot-holding units had just been turned off at time of inspection, and leftover food items were being discarded.
- General sanitation excellent.
- Food storage practices satisfactory - all food stored properly covered and off the floor, with good separation between raw and ready-to-eat food items.
- Dry storage area well-organized and maintained in sanitary conditions.
- No signs of pest activity noted. Pest control is in place.
- Kitchen staff had valid FOODSAFE certificates.
