Observation: Old meat food splatter and debris observed at the floor wall interface and wall surfaces below and behind the counter where the hamburger grinder unit is situated upon.
Corrective Action(s): Recommend installing a stainless steel guard at the end of the table to prevent meat from accumulating on the wall surfaces and floor below the unit. This will allow ease of cleaning and maintenance.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: New automatic quat and soap dispensers installed at deli dept 3 compartment sink. Hot water not connected to dispenser.
2 green wire rack shelving units inside the meat dept walk in cooler observed to be badly rusted/flaking
Corrective Action(s): Manager stated installer is aware and will be back to correct the issue so that the water temperature can be adusted when dispensing both soap and sanitizer.
Manager stated that new wire rack shelving has been ordered.

New soap and sanitizer dispensers installed at both the meat dept and deli dept sinks by a new provider.
New easily cleanable floor mat installed in the meat dept.
Outdoor freezer floor has been cleaned
Handles to both the walk in cooler and freezer cleaned. Ensure these are cleaned regularly during the day.
Saran wrap units observed to be clean. Meat dept manager stated new dispensers with covers have been ordered.
External surface of garbage containers has been cleaned.. Ensure these are cleaned on a regular basis
Rubber gasket replaced on sanitizing sink in deli dept.
Milk crates have been removed from the meat dept
Gap at the base of the front door entrance has been eliminated.
**Continue to educate staff on how to read concentrations when using Quat test strips to verify minimum concentrations are present when warewashing.
