Observation: Both coolers along the cookline measured approx 10-12C at the time of inspection.
Corrective Action(s):
1) Move all potentially hazardous foods to working coolers
2) Use an ice bath to keep small portions of foods cold during a rush OR discard all foods left out at ambient temperatures within 2 hours
3) Call your repair technician

Observation (CORRECTED DURING INSPECTION): Sanitizer bottles were filled with multi-surface cleaner.
Corrective Action(s): A 100-200ppm solution of chlorine, or a 200ppm solution of quat must be used for food contact surfaces. Staff re-filled bottles with 200ppm quat solution at the time of inspection.

Observation: Bar glasswasher did not dispense any chlorine at the time of inspection
Corrective Action(s): Repair bar glasswasher so that it dispenses a minimum of 50ppm chlorine. Until it is repaired, use the dishwasher in the main kitchen.

Observation: Paper towels not available at handwashing stations.
