Observation (CORRECTED DURING INSPECTION): One sanitizing pail at front of kitchen, and another at the prep cooler area only had 10 ppm chlorine residual inside as sanitizer.
Corrective Action(s): Solutions was remade and had 200 ppm chlorine residual at time of inspection. Ensure that you always add enough bleach to your sanitizing pail, and maintain them every 4 hours (i.e. empty and refill it up). You may also use your chlorine test strips to check.

Follow-up inspection to routine conducted on November 22, 2018 (RPT#: JMAA-B6RT48). The following observations were made:

- Old onion slicer machine has been removed from the premise - good
- Old knives and utensils no longer used in facility have been removed from warewashing room near buffet
- Potato presser maintained in good sanitary condition as required from last routine inspection. Always wash, rinse, and sanitize all food equipment immediately AFTER each use
- Temperature logs maintained and up-to-date. Ensure that you keep this up - these logs are for your own benefit!
- Low-temperature dishwasher inside warewashing room contains approximately 50 ppm chlorine residual in final rinse, at the plate
- Area maintained in good sanitary condition
- Onions are now stored securely in plastic trays instead of dairy crates
- Chemicals are stored away from cleaned and sanitized plates as instructed in routine inspection
