Observation: Garbage bags used to cover/store food in freezer.
Corrective Action(s): Do not use garbage bags for food storage, as they are not food-grade material. Use only food-grade material for storage of food, such as saran wrap, tin foil, etc.

Observation: Some rodent droppings were observed on floors (in corners) and on base of dough machine and unused equipment.
Corrective Action(s): Clean droppings and sanitize all affected areas with bleach. Ensure all equipment is covered and protected from potential contamination. Utensils stored in bins must be properly covered.

Comments

- Hand sink was supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm
- Dishwasher dispensed 50 ppm chlorine to dish surface, detected after rinse cycle
- Walk-in cooler at 4C. Prep cooler not in use. Display cooler not in use (only for dry storage at this time)
- Walk-in freezer at -18C
- Hot holding case measured at 60C. *ensure this case is equipped with a thermometer.
- Ventilation canopy observed to be clean at time of inspection
- All food and food-related equipment stored off the floor - good.
- Pest-proof containers available for dry food storage.
- Pest control is in place. *Ensure to continue with bi-weekly services and email reports to health inspector.
- Cleaning has improved; no rodent droppings were seen on food storage bins, however some were seen on equipment rarely used and in hard to reach areas of floors.
*One unused display cooler in back still needs to be removed.
