308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Two of the three sink plugs were not in good working order according to staff. One of these sink plugs was recently obtained last week according to staff since the other previous sink plug appeared worn out. One of these sink plugs was unable to contain 200 ppm QUATS sanitizer in the third compartment sink. As a result, staff moved the sink plug from the first compartment sink to fill up the third compartment sink with 200 ppm QUATS sanitizer during the inspection.
Corrective Action(s): Ensure there are at least three functional and adequately sized sink plugs available to fully immerse equipment/preparation utensils in the appropriate respective detergent, potable water rinse, and sanitizer solutions as part of the sequential wash, rinse, sanitize, and air dry process; Correct within 1 week and provide an update to the Environmental Health Officer. Ensure all preparation utensils/food equipment are thoroughly washed, rinsed, sanitized via immersing into 200 ppm QUATS for at least one minute contact time in accordance with manufacturer's directions, and air dried.

Both handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler and pizza prep. cooler were at 4 degrees C or less.
Beverage cooler was above 4 degrees C, however it is used for shelf stable beverages only.
Walk-in-freezer temperature was satisfactory.
2 hour time-stamps were in place for pizza slices held at ambient temperature in the display case.
Floor drain was covered with a cover near the walk-in-cooler.
Light bulb in walk-in-cooler was encased in a shatter-resistant cover.
Vegetable slicer was in a clean condition.
Ice machine and ice bin were in a clean condition.
Ventilation hood appeared to be in a clean condition.
200 ppm Quaternary ammonium compounds (QUATS) sanitizer was available in a labelled spray bottle and sanitizer pail.
Staff setup 200 ppm QUATS sanitizer in the third compartment ware-washing sink during the inspection. Manufacturer's directions of the QUATS sanitizer were reviewed with staff: 200 ppm active QUATS concentration and a minimal 1 minute contact time to achieve effective sanitization. Pump style manual dispenser was attached to the QUATS sanitizer stock bottle.
QUATS test strips were available for staff to monitor the QUATS sanitizer concentration.
Pest control program was in place on a weekly basis via the Mall.
Staff member on shift held valid FOOSAFE Level 1 equivalent course training.
