Observation (CORRECTED DURING INSPECTION): Uncovered inserts of raw chicken stored directly next to cooked chicken in drawer coolers under flat-top grill.
Corrective Action(s): Minimize potential for contamination of cooked chicken by placing both inserts of cooked chicken in the top drawer, and both inserts of raw chicken in the bottom drawer. When reheating the cooked chicken, ensure internal temperature reaches at least 74C.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in several buckets and spray bottles
- Low-temperature chemical dishwasher dispensed 50 ppm chlorine to dish surface, detected after rinse cycle
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- Hot held food items were measured to be above 60C
- Temperature logs well maintained and up to date
- In-use tongs were held in water at above 60C
- Food storage practices satisfactory in all other coolers (aside from drawer coolers mentioned above)
- Dry storage areas satisfactory
- General sanitation good. All equipment maintained in sanitary conditions.
