Observation: 1) Dough machine, dry ingredient bins and lids, and faucets for hand washing stations were heavily soiled with food debris.
2) No clear area in dishwashing area designated for "dirty" and "clean" dishes.
Corrective Action(s): 1) Ensure to clean and sanitize the dough machine after each use.
Clean and sanitize lids of dry ingredient bins, and do so on a weekly basis.
Clean and sanitize all sink faucets, and do so on a daily basis.
2) Ensure dirty dishes are stored to the left of the dishwasher where the pre-rinse sink is located, or stored in one compartment of the sink. The area directly to the right of the dishwasher is for clean dishes only.

Observation (CORRECTED DURING INSPECTION): No sanitizer solution available for sanitizing food contact surfaces.
Corrective Action(s): Sanitizer must be available for use during all hours of operation, and must be changed every 2 hours. Wiping cloths must be stored inside bucket of sanitizer as well. Staff prepared fresh solution of sanitizer at time of inspection; 200 ppm chlorine detected.

Observation: Some food items were stored uncovered in walk-in cooler and in prep coolers.
Scoops were stored directly in dry ingredients inside bins.
A box of potatoes and a bag of rice were stored directly on the floor.
Corrective Action(s): Ensure all food items are properly covered.
Wash and sanitize scoops after each use, and store in a clean place. Do not store scoops in dry ingredients, as handles can contaminate the food.
Do not store any food on the floor.
Correct by: Immediately.

Observation: Food debris and grease noted on doors and handles of coolers, and inside prep coolers.
Corrective Action(s): Clean and sanitize all doors and handles of coolers on a daily basis.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 71C at dish surface during rinse cycle
- All coolers were measured to be at 4C or colder
- Freezer was measured to be at -25C
- Raw chicken (measured to be at ~8C) was being prepared at time of inspection - ensure chicken prep is completed within 2 hours and return to cooler at 4C.
- Most food in walk-in cooler covered - good.
- Dry storage areas require some attention. Additional shelving required for better organization.
- Prep coolers have been pulled away from wall for better access from cook line. OK. Hand sinks are still accessible.
- Pest control in place. Pest control reports were not available on-site; email last three reports to Ying.Tan3@fraserhealth.ca by tomorrow.
