304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed throughout premise, concentrated around crevices, around the walls, and behind / under equipment. they were observed in the following areas:
1. In high numbers around and underneath the transformer, and on top the metal fencing surrounding the transformer.
2. All along the walls in the back entrance area leading to the hallway with the transformer. This includes underneath the shelving with old tools and inside of an unused old wok.
3. Scattered around the corner behind your red Milwaukee machine.
4. Along the inner edges of the pallets storing your flour.
5. Underneath your dry storage bins containing flour.
6. At the front-of-house, underneath Cooler #1
7. In your dough mixing room along the edges.
8. Upstairs office area underneath all shelving.
Corrective Action(s): All rodent droppings are to be removed with 1 part bleach, 9 parts water. Immerse droppings for 10-15 minutes, then remove while wet with a paper towel. Re-mop the area again with bleach and allow to air-dry. Contact your professional pest control company once the clutter has been removed in order to assess any openings along the walls, and email all updates to the Environmental Health Officer.

Observation: Old equipment present throughout the premise saturated with either grime or droppings:
1. Old can opener with caked-in grime.
2. All unused tools near the back entrance near the transformer.
3. Unused tools scattered throughout the premise, particularly underneath shelving units including woks and old cash registers.
Corrective Action(s): Any equipment that is not required for the day-to-day operation of the premise should be promptly removed. Many of these equipment, such as your woks and cash registers, are creating harbourage sites for mice and mouse droppings have been observed on them.

Undertake a thorough assessment of what you need and what you don't need, and remove all unnecessary items from the premise.

Comments

Routine inspection conducted. Premise generally needs improvement in terms of sanitation and removing cluttering. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 3C
- Stand-up stainless steel coolers at front-of-house and back-of-house maintained at 4C or less
- Stand-up glass door cooler at 2C
- Walk-in freezer at -17C
- Stand-up stainless steel freezers at approximately -18C
- Cooked buns cooked 1 hour ago will be placed into the freezer to be rapidly chilled and frozen before packaging
- Temperature logs maintained and up-to-date

2. Hygiene and sanitizing
- Hand wash stations in main processing area, in dough mixer room, and in staff restroom stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottles throughout premise measured at 200 ppm chlorine residual
- Ventilation canopy in good sanitary condition
- 3-compartment sink used at time of inspection. Staff aware of procedure for pre-scraping, washing, rinsing, sanitizing, and air-drying. Drain plugs available
- Bread cutter and dough moulding machine is disassembled after use and cleaned-in-place with bleach

3. Storage
- Food-grade dry storage bins available for flour
- All food products stored at least 6" off the floor
- Raw products stored underneath cooked and ready-to-eat products (e.g. eggs stored underneath dairy)
- Chemical storage is by mop sink located inside the restroom

4. Pest Management
- Professional pest control company arrives on a monthly basis. Please send me the most recent pest control report from the company

5. Recommendations
- Obtain metal pest-proof bins for storing your flour at the back of the premise
