Observation (CORRECTED DURING INSPECTION): Dried on food debris observed on deli slicer (including food contact surfaces).
Corrective Action(s): Deli slicer was cleaned and sanitized at time of inspection. Ensure all food equipment, utensils, and surfaces are disassembled (if applicable, per manufacturer's directions), and properly washed, rinsed, and sanitized after each use. Equipment that is not properly cleaned and sanitized may potentially contaminate food and may potentially attract pest activity.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher was measured at a maximum of 49 degrees C at the utensil surface at the time of inspection.
Note: Dishwasher was turned on at start of inspection and was not used for a period of time to allow it to heat up. Dishwasher was tested for multiple cycles.
2. Food contact surface sanitizer not available.
Corrective Action(s): 1. A bleach water sanitizing solution was prepared at 100 ppm chlorine in one of the warewashing sinks. Ensure all food equipment and utensils on site are re-sanitized. Ensure that utensils/equipment that are run through the dishwasher receive a final manual sanitizing step (100 ppm chlorine). Manual ware washing poster provided. Facility uses only single use containers/utensils for customers.
2. Bleach water sanitizer was prepared in a bucket at 200 ppm chlorine. Wiping cloth stored in bucket. Ensure an appropriate food contact surface sanitizer is available at all times during operations at the appropriate concentration (e.g. 100 to 200 ppm chlorine) to sanitize food contact surfaces.

Observation: 1. Mesh bag of onions stored on floor of walk-in cooler.
2. Food stored in opened cans in prep and walk-in coolers (e.g. olives).
3. Some uncovered food items observed in walk-in cooler. Bowls observed being used as scoops.
Corrective Action(s): 1. Ensure all food items are stored off the ground to (a) protect food from potential contamination, and (b) to facilitate proper cleaning of floors and floor-to-wall junctions. Date to be corrected by: Today.
2. Discarded by operator. Ensure that all canned foods are immediately tranferred to an appropriate, food-grade container with a covering once cans have been opened. Cans may potentially rust when exposed to oxygen, potentially leading to (chemical) contamination of food. *CORRECTED*
3. Ensure all food items are properly covered to protect from potential contamination. Do not store bowls in food containers as they may potentially contaminate food. Scoops with handles may potentially be acceptable provided that the handles are stored outside of the food product. Date to be corrected by: Today.

Observation: High temperature dishwasher is not achieving the minimum sanitizing temperature of 71 degrees C at the utensil surface at the time of inspection.
Corrective Action(s): Ensure dishwasher is capable of meeting or exceeding minimum sanitizing parameters. Have dishwasher serviced as needed. In the interim, continue to follow the corrective action outlined in violation 302 until dishwasher is re-inspected by the Environmental Health Officer (EHO). Date to be corrected by: October 20, 2022.
Note: Consult with Environmental Health Officer prior to changing/replacing equipment such as dishwashers.
