Deli slicers cleaned and sanitized every 2 hours. Logs maintained and available for review.

Retail area coolers at or below 4 degrees C.

Sushi preparation:
Hand sink shared with deli meats.
200ppm quats available for use in labeled spray bottle.
Preparation cooler inserts and lower section at or below 4 degrees C.
Sushi rice acidified to pH ~ 3.5 for room temperature storage.
