Observation: 79 cartons of free range eggs (one carton has 30 eggs) were stored at room temperature on the shelves. Internal temperature of egg was measured at 17.5C. Cold potentially hazardous food such as eggs must be stored at a temperature of 4C or less.
Corrective Action(s): Eggs are HELD in storage room for 1 day. A follow up inspection to be conducted on April 21, 2022. See violation 208 for details.

208 - Foods obtained from unapproved sources [s. 11]
Observation: 1. Frozen individually packaged raw meat - beef, fish & chicken was found in the freezers. No labels were found on the packages. Operator stated that the meat was bought from a nearby farm. No receipts/invoices provided to confirm if the supplier is an approved source. The risk of selling food from unapproved source was discussed and the operator VOLUNTARILY discarded 26 packages of frozen raw meat during the inspection.
2. 79 cartons of free range eggs (1 carton has 30 eggs) were observed at the room temperature. Operator stated that the eggs were bought from nearby free range farm. No grading of eggs was evident. No invoices/receipts available to verify the supplier. The box of eggs states to store eggs at 18C. Operator was told to discard the eggs. However, operator would like to return it to the supplier. Invoice/receipt would be required to confirm the return of eggs.
Corrective Action(s): DO NOT SELL the eggs to the customers. Operator removed the eggs from the shelves and moved them to another room during inspection. Eggs are HELD for 1 day. A follow-up inspection will be conducted.

Routine inspection conducted at the food store and the following observations were made:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk-in cooler maintained at 4C
- 3 stand up freezers maintained at -18C, -19C & -15C
- Chest freezer at 0C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
