Coolers are all at 4 C / 40 F or colder.
Ceviche (not on menu but ok for summer menu). Discussed freezing of fish (if not cooked and are not exempt from freezing -20 C for 7 days would be required). Call if you have questions.
Hot holding - all sauces are at 60 C or hotter today - good.
Kitchen hand sink and washroom sink have liquid soap and paper towels, in dispensers.
Premises is well-organized.
Chlorine bleach sanitizer in spray bottle >400ppm is strong (note that 200ppm required and that is about 1 tsp bleach in 1 litre water).
Commercial dishwasher has a final hot water sanitizing rinse (71 C + measured inside of the machine.
Premises is clean and well-organized. Food is up off of the floor.
Pest control monitoring is in place. Check regularly and seal holes where necessary. If there is a problem, consult with licensed pest control.
Food Safe training - certificates are < 5 years old (2022) - good.
