209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Tartar sauce and green chutney sauce containers had a plastic sauce container inside, used as a 'scoop' for the sauce.
Corrective Action(s): Sauce containers removed at time of inspection. Do not place any sauce containers inside - food handlers' may contaminate the sauce by reaching in to 'scoop' the sauce out. Alternatively, consider using a ladle to remove the sauce out of the container.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mould accumulation present on top of the tiling above the 3-compartment sink.
Corrective Action(s): Remove the mould and re-grout the area on top of the tiling to keep it in good sanitary condition.

Observation: Tiling underneath 3-compartment sink, as well as the wall cover underneath the light switch, is falling apart.
Corrective Action(s): Reinforce the wall cover and replace tiling that has fallen off. All areas around the sink should be smooth, easily cleanable, and impervious to moisture.

Comments

Routine inspection conducted. Facility generally is in satisfactory sanitary condition. The following was observed at the time of inspection:

1. Temperatures
- Walk-in cooler (left) at 2C
- Walk-in cooler (right) at 4C
- Pizza prep cooler line at 4C
- Back prep cooler line at 2C
- Beverage coolers at 1C
- Hot-holding unit at 70C
- Chest freezer at -25C
- Stand-up freezer at -15C
- Temperature logs maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer pail measured at approximately 200 ppm chlorine residual. As noted before, cloths should be immersed INSIDE the sanitizing pail
- 3-compartment sink set up for washing, rinsing, sanitizing, and air-drying
- Dough mixer was recently used and was placed at the 3-compartment sink to be cleaned and sanitized
- Utensils and pizza knives generally stored in good sanitary condition
- Potato presser was inside the 3-compartment sink at time of inspection - ensure that this is always cleaned and sanitized after each use

3. Storage
- Food products stored at least 6" off the floor
- Raw fish and chicken in the walk-in cooler was stored underneath produce (e.g. vegetables)
- Cooler units are generally well organized

4. Pest Control
- No evidence of recent, visible pest activity at time of inspection

5. Administrative
- Permit posted and up-to-date
- Supervisor recently re-took FoodSafe 1 (expiry: July 2024)
