Observation (CORRECTED DURING INSPECTION): 1. Found 0 ppm quat in sanitizer spray bottle.
2. was advised dishes are dried with cloth towel if run out of plates
Corrective Action(s): 1. Must ensure spray bottle has 200 ppm quat, corrected at time of inspection.
2. Remind all staff of proper dishwashing steps: wash with soap, rinse, sanitize, then AIR DRY. Wash dishes more frequently if running out of usable dishes.

Corrective Action(s): 1. Ensure all food items are store 6"/15 cm off the floor at times.
2. Ensure all food is properly covered with lids or plastic wrap when being put away.
