Observation (CORRECTED DURING INSPECTION): Dirty cloths are used for cleaning with spray sanitizer. Keep a container of sanitizer handy and keep cleaning cloths immersed in sanitizer when not in use.

Observation (CORRECTED DURING INSPECTION): Tortillas wrapped in a dirty cloth to keep warm. Using cloth to wrap food is not acceptable; cloth is not food grade. Dirty cloth is obviously much worse. Do not use cloths to wrap tortillas.

Observation: Tiles have been replaced or covered in several areas with a non-cleanable rough material. These areas are collecting grime. Replace tiles or otherwise make flooring clean, smooth and easily washable as well as non-slip. Tiles can be chosen for non-slip rating.

Hand sinks are stocked and working.
No sign of rodent infestation were observed.
Hot holding units were all over 60 Celsius.
Fridges were all under 4 Celsius.
