-Sushi cooler was at 4C.
-Under counter coolers in sushi area (3) were at 4C.
-Upright cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Counter top coolers (2) were at 4C.
-Refrigerator freezer was at 4C/-18C.
-Chest freezer (kitchen and storage area - 3) were less than -18C.
-Upright freezer was at -14C.
-Hot holding was greater than 60C.
-Cooked potentially hazardous foods were rapidly cooled and were at or below 4C.
-Sushi rice had a pH of 4.0.
-High temperature dishwasher had a final rinse of 74C on the dish surface (minimum of 71C required for sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails were at 200ppm.
-Sushi cutting board sanitized at least every 2 hours.
-Equipment was found to be clean and sanitary.
-General food storage practice good at the time of inspection. Foods stored off the ground and protected from potential contamination.
