Comments

-Discussed new Lobster sandwich menu item with operator. Seafood is re-heated to 165°F prior to being placed within hot holding unit at 60°C or greater.
-Observed meat slicer being cleaned and sanitized between uses.
-Ensure there is easy access to back door without any obstructions.
-Overall cleanliness of the premise is good.
-Discussed FoodSafe Level 1 certification expiration dates.
-All hand-sinks had the following:
→liquid soap, paper towel and hot/cold running water.
-Observed good hand-washing procedures between changing gloves
-Quats solution measured at 200ppm in third compartment of three-compartment sink
-Hot holding for seafood, chicken noodle soup and meatballs measured at 61.2°C, 60.9°C and 63.1°C respectively
-Daily records kept for coolers, freezer and hot holding units
-Operating permit is prominently displayed
-Operator on-site has FoodSafe Level 1 Certificate and is available
-Food within walk-in cooler is covered
-Food is stored 6 inches above ground or greater
-The following temperatures were measured:
→Beverage cooler: 3.9°C
→Walk-in cooler: 3.2°C
→Walk-in freezer: -10.9°C
→Prep cooler: 3.4°C
→Prep cooler: 3.6°C
-Thermometers are present for coolers, freezer and hot holding units
-No evidence of pest activity at time of inspection.
