Observation: Level low of fruit fly activity noted by the juicer and back mop sink area. As mentioned on the last inspection report, the follow must be done to help rectify and control fruit fly problem:
- prevent build-up of organic material within the food premises by taking out garbage and organic compose frequently throughout the day.
- clean spills of syrup or organics immediately by mopping the floor with a cleaner.
- flush floor drains with cleaner frequently.
- clean hard to reach areas frequently to prevent dirt and syrup. Areas such as under sinks and cooler equipment.

Comments

Routine inspection conducted and the following were noted:
Walk-in cooler at 4C.
Under-counter coolers at 4C.
Stand-up freezer in offsite stall storage at -18C.
High temperature dishwasher achieved a final rinse temperature of 74C at plate level.
3-compartment sink satisfactory.
Quats dispenser at 200ppm.
hand washing stations satisfactory.
Hot holding of hot dogs were at least 60C internally.
Review the need of properly cleaning and sanitizing of juicer with assistant manager. Ensure the juicer is fully disassembled and adequately washed and sanitized at least every 4 hours.
