Observation (CORRECTED DURING INSPECTION): Paper towels missing in the dispenser at the handwashing station in the main kitchen.
Corrective Action(s): The operator restocked the dispenser with paper towels. Ensure that all handwashing stations are supplied with hot/cold running water, soap, and paper towels.

Comments

- General sanitation is good
- All other handwashing stations (BOH beside the prep line cooler) is supplied with hot/cold running water, soap, paper towels
- All coolers at < or = 4C (BOH walk in = 4C, FOH prep = 4C, FOH upright beverage = 4C, upright dessert display = 4C)
- FOH pizza hot holding unit at 60C.
- Thermometers available in all refrigeration units.
- High temperature dishwasher achieved 72.2C at the plate’s level during the final rinse cycle.
- Surface sanitizer available in spray bottles at the BOH at 100ppm chlorine.
- Dry storage area has adequate space and wire racks. Food items are stored 6inches (15cm) off the floor.
- No signs of pest activity.
- FOODSAFE training could not be verified at the time of the inspection. Document must be available in the follow up inspection.
