Observation (CORRECTED DURING INSPECTION): Current practice for disinfecting carboys is to add 1 teaspoon sani-brew into the carboy washer. No chlorine sanitizer was detected on the carboys after the final rinse.
Corrective Action(s): A minimum of 50ppm chlorine is required to properly disinfect carboys. After washing carboys in washer, bottles can be manually disinfected with the sani-brew spray (100ppm).

Comments

-Facility offers wine making services. Bottles are filled by the customer.
-Wine bottles are disinfected in a bottle washer. Iodine disinfectant tested at 12.5ppm (minimum 12.5ppm required for proper sanitizing).
-Sani-brew spray bottles and pail properly labelled and tested at 100ppm to 200ppm.
-Work surfaces and equipment disinfected with sani-brew solution
-Wine bottle corking station handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Back flow preventers present on faucets or in the plumbing for hose bibs with hoses attached.
-Shelving units smooth, non-absorbent, and easily cleanable.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
