Observation: General surfaces of equipment were greasy/sticky.
Corrective Action(s): Deep cleaning required. Wash and sanitize all surfaces, including but not limited to sink faucets, cooler door handles, sanitizer spray bottles, countertops, etc.

Observation: 1) Paper towel dispenser for front hand sink was not working properly. Liquid soap dispenser for back hand sink was broken.
2) One compartment of three-compartment sink was clogged.
Corrective Action(s): 1) Replace broken/improperly dispensers with new dispensers.
2) Contact a plumber for servicing the clog at the three-compartment sink.

Observation: No staff onsite had FoodSafe level 1 or equivalent.

Schedule shifts accordingly or have more staff register for and complete FoodSafe level 1 or equivalent.

Comments

- Both hand sinks were supplied with hot and cold running water, liquid soap, and paper towels; however, one soap dispenser and one paper towel dispenser were broken. See violation code 308 above.
- Bleach sanitizer solution available in spray bottle at 200 ppm.
- Cooked donair meat was hot-held at 60C or hotter. Ensure to check temperatures of hot-held meat throughout the day.
- Hot-held rice measured at above 60C.
- Observed staff completing the secondary cook step for donair meat that had just been shaved off the cone. Good.
- Walk-in cooler and prep cooler measured at 4C or colder.
- Chest freezers satisfactory
- Reviewed two-compartment manual warewashing method with staff at time of inspection, as the third compartment of the triple-sink needs to be unclogged (see violation code 308 above).
- Dry storage area satisfactory.
- No signs of pest activity noted at time of inspection.
