- Are insulated containers hot or cold? What is the safe holding temperature of products in insulated containers?
- Write out the process of the dishes you're making. Specify critical control points (high risk procedure), monitoring methods, and corrective actions.
- All of the above changes require specific temperatures to be added
- Are your hand sinks portable units, or assembled-on-site temporary units?
