Observation (CORRECTED DURING INSPECTION): 1. Walk-in cooler is measured to range from 7.2oC - 7.7oC (air temperature). Food internal temperatures are measured to be 6.9oC (diced tomatoes); 6.4oC (chicken); and 6.9oC (block of cheese). No temperature log is maintained.
2. Pizza prep cooler is measured to be 5.6oC (air temperature). Food internal temperature is measured at 4.3oC (diced onion) and 4.6oC (pizza sauce).
Corrective Action(s): Potentially hazardous foods must be stored under 4oC or less at all times.
All potentially hazarouds foods in walk-in cooler discarded.
All potentially hazardous foods in pizza prep cooler moved to another cooler.

Observation (CORRECTED DURING INSPECTION): A tray of frozen foods observed on the ground in the kitchen.
Corrective Action(s): Staff has sinced move tray to cooler. Thaw foods properly:

2. Fix pizza prep cooler so that temperature can be maintained at 4oC or less.

Note:
1. Purchase chlorine test strips to test dishwasher sanitizer concentration. Test strips on-site expired in 2020.
2. Purchase Quats test strips to test sanitizer concentration.
