Observation (CORRECTED DURING INSPECTION): Cheese slicer not properly cleaned and sanitized after use.
Corrective Action(s): Cheese slicer must be thoroughly cleaned and sanitized after each use. Use warm water and detergent to wash the cheese slicer to help remove all cheese residue; rinse with plain water; and sanitize with bleach and water (1 oz per 4 litres of water). Operator corrected at time of inspection.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Coolers and freezers equipped with thermometers.
Food storage and display practices are good.
;Hand wash stations stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene appeared satisfactory.
General sanitation was satisfactory.
No signs of pests.
At time of inspection there were no foul odors in the premise (however the back door was open for a delivery at the beginning of the inspection); and there were no accumulation of packing boxes at the back area.

Discussed with operator that if 'packed on' dates are included on the labels for re-packaged items, the date should not be crossed off. Re-packaged and vacuum-packaged meat products in the coolers and freezers were found to have the 'packed on' dates crossed off with a black marker. Operator said customers had the perception that some of these products are no longer fresh because they are more than a few days past the pack on dates even though they are stored in the coolers/freezers. Advised operator to follow the labelling requirements for re-packaged products as per Canadian Food Inspection Agency guidelines.
