Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-Temperature monitoring system in place. No issues observed from recent records.
-Temperature of food items on hot buffet tables are measured/recorded X2 daily.
-200ppm QUAT available in labelled spray bottles and at 3 compartment sink for manual dishwashing. Automated dispenser at correct concentration.
-Sushi making machine currently in use at this time. Cleaned/sanitized after each shift.
-Traps in place. No evidence of pest activity observed at this time.
-General sanitation of the department satisfactory at this time.

NOTE: Ice build-up at the bottom of stand-up freezer by the 3 comp sink to be removed. Currently, temperature is not affected.
NOTE: Pizza ingredients stored in one of the sandwich coolers in the back prep room-. No layout changed.
