Observation (CORRECTED DURING INSPECTION): Cooked cold potatoes were at 16 deg. C in container on counter. Discard if exceed 2 hrs at room temp.
Corrective Action(s): Keep potatoes in cooler unit at 4 deg. C or less. Small amount can be kept out on ice during busy times.

-Hand wash stations had soap, paper towel, hot and cold running water.
-Bleach available on site. See violation code 302 re: sanitizer.
-All coolers 4 deg. C or less (prep, walk in, milk etc)
-Freezers x 2 (chest type) both <= -18 deg. C
-Hot holding of soup x 2 on stove > 60 deg. C
-All stored foods appeared protected (ie off the ground, covered)
-Lights had sleeves
-Ice machine appeared clean - see violation code 209 re: scoop.
-High temperature dish washers achieved 71 deg. C with thermolabel
-Good general sanitation
-No obvious signs of pests. Screen door closed.
-Reminded operator of foodsafe recertification. Pamphlet provided.
