Discussed the Food safety plan for the chicken donair

As per your approved FS plan you are required to have a secondary cooking step ( up to 74C internal temperature ). BCCDC guideline on donairs enclosed with this inspection report.

Beef/lamb - are precooked / coming from North Vancouver supplier.
Please email me the supplier instruction for precooked food items. ( business card enclosed )
Daily temperature logs - must be up to date ( mail the copy )
temperature measured fro the following equipment:
- hot holding unit above 60C
- beef donair at hot holding unit at 66C
- prep cooler at 3C
- walk in cooletr at 3C
- bleach used as approved sanitizer
