Observation (CORRECTED DURING INSPECTION): Deep fry batter observed on the counter when not being used. This was relocated to the sandwich prep cooler at time of inspection.
Corrective Action(s): Deep fry batter Must either be kept in an ice water bath when not in use or kept in the sandwich prep cooler.

Observation: Hand was sink adjacent to the ice machine observed to be under repair. Alternate hand wash sink is located opposite the dishwasher is in operation and is conveniently located for staff to access.
Corrective Action(s): A follow up inspection will be required to verify repair has been done.

Monitoring logs being maintained
***Document the final rinse temperature of the dishwasher in the daily log. Currently the log is documenting the wash water temperature which incorrect.
Dishwasher at 82c (At plate level. Soap dispensed into the wash cycle
**Operator stated he will switch out the back rack inside the walk in cooler as this one is developing rust.
All cold holding equipment cold holding at <4c
Miso soup hot holding at >60c
No pest issues observed
