Observation (CORRECTED DURING INSPECTION): Various hot foods are being air-cooled at ambient temperatures in large-volume containers (ie. 18qt plastic Sysco containers w/lids). Cooling procedures were noted on previous inspection in October 2023.
Corrective Action(s): *Adjust cooling practices to ensure all foods are cooled from 60C+ to 4C within a maximum time period of 6 hrs (ie. 2 hrs to reduce temps to 20C, then an additional 4 hrs to reduce temps from 20C to 4C)
*Options include: Use of an ice wand, quick-cooling in ice water, splitting product into multiple smaller containers, etc)
*Ensure employees are trained to follow the cooling procedures*

Observation (CORRECTED DURING INSPECTION): Two wall-mounted soap dispensers were empty at onset of inspection.
