Observation (CORRECTED DURING INSPECTION): - Butter chicken sauce stored in the walk-in cooler had an internal temperature of 13.9C. Operator reported the product was prepared the day prior at 9 or 10pm.
Corrective Action(s): - Operator discarded product. Cooling procedures outlined in food safety procedures must be followed. Product must be cooled from 60C to 20C within 2 hours and from 20C to 4C within 4 hours.

Observation (CORRECTED DURING INSPECTION): - Spices noted stored at station in open bag.
- Open can of ketchup stored in walk-in cooler
Corrective Action(s): - Ensure food packages are stored in sealed bags or containers with tight fitting lids
- Ketchup was discarded by Operator. In future, ensure product from metal cans are transferred to food grade containers once opened.

Comments

Operation:
- Business operating at YVR Prep Mon, Tues, Thurs, Fri 6pm - 4am. Assigned to station #2
- Operator prepares Butter chicken, Vindaloo curry, Aloo gobi, Saag, Lamb curry, Chana masala, Chicken tikka, Chicken tikka masala, Aloo Masala, Rice. Products are cooked and cooled at YVR Prep and transported cold in Cambro units to Operator's restaurant (Horn Ok Please 1162 Denman St).
- Operator was picking up food to transport at time of inspection. *Operator had Cambro unit present for transport. Unit was not pre-chilled and needs to be prior to transport in addition to ice packs being used. Unit was left in the walk-in cooler through the duration of the inspection to chill.
- Operator has a probe thermometer to monitor food temperature.
- Food stored in walk-in cooler (with exception of ketchup noted above) was stored in containers with tight fitting lids
- Designated station and storage (refrigerated, dry, frozen) maintained in sanitary condition
- Quats sanitizer present at station.

Premises:
- Handsink accessible to station supplied with hot and cold running water, liquid soap and paper towel
- Walk-in cooler (ambient) 3C
- Walk-in freezer -18C
- High temperature dishwasher operational. Final rinse was 75.9C at dish surface
