Observation (CORRECTED DURING INSPECTION): "Sanitize" sink had soapy water in it, no detectable sanitizer.
Discussed dishwashing procedure with staff, and there was some confusion as to which sinks were used for what.
Fruit cutting program added to confusion; fruit cutting is done in the deli and uses one compartment of the sink for washing fruit. The center compartment appears to be used for washing fruit which adds to the confusion; washing is done one one side and then transferred over the middle sink to the sanitizer. This could contaminate the fruit.
In addition, the presence of fruit prep in the deli tends to delay dishwashing until "after the produce people leave at 4 pm." This is not acceptable.
Recommend moving the fruit cutting back to the produce area. Knives can be washed in the deli as per the 3 compartment method; OR use the commercial dishwasher near produce.
Fruit cutting may be done in the deli but but dishwashing sinks should not be used for fruit washing. Several options discussed.

Overall premise is clean and organized.
Fridges are all< 4 Celsius.
Hot holding > 60 Celsius.
Proper handling of raw chicken including good separation observed.
Sanitizer is 200 ppm quats.
